Ingredients

  • 1kg pears
  • 600g sugar
  • 800ml water
  • 10g turmeric
  • 1 star anise
  • 30ml white wine
  • 1 tsp vanilla paste
  • 1 tsp lemon zest
  • 5 x 500ml glass jars with lids

Method

  1. Peel pears, then cut in quarters and cut out cores. keep prepared pears in a container of cold water, acidified slightly with lemon juice or vinegar.

  2. Bring remaining ingredients to a boil

  3. Fill sterile jars with pear pieces, ensuring as little space left as possible.

  4. Top with sugar syrup ensuring pears are fully submerged.

  5. Bring a large pot of water to a rolling boil and fill ⅔ with sealed jars, when water reaches a rolling boil again, set timer for 10 minutes.

  6. After 10 minutes at a rolling boil, remove with canning tongs and allow jars to cool completely.

  7. Test a jar by opening it, there should be a clear pop and release of pressure.

  8. Label, date & store in a cool dry place, away from direct sunlight.
